Recipe for 2009

Seared Scallops with Mandarin Oranges

 

1 pound Sea Scallops (small)
1 pound pasta, your choice
1 red bell pepper- Julienned
1 med. red onion- sliced thin
1 cup sliced mushrooms
3 cloves garlic- pressed
3 Mandarin oranges - peeled and segmented
1/2 cup Mandarin Vodka
1/4 cup Shredded Parmesan Cheese.
Olive oil as needed
1 bottle Mandarin Marinade (we used Sunset Ridge, Newcastle)
Parsley, chopped, as needed

 

Marinade scallops in 1/4 cup mandarin marinade. Let stand for 4 hours.

Cook pasta as directed on package and set aside.

In stainless sauté pan place two table spoons of oil in pan on medium-high heat. Add scallops to pan. Sear scallops on both sides and remove from pan. Add onions and bell peppers to pan and cook 3 to 4 minutes. Add mushrooms and garlic to pan and cook a few minutes. As garlic starts to turn translucent add Mandarin Vodka, marinade, pasta and Mandarin oranges to pan. Cook until pasta is warm. Top with chopped parsley and Parmesan Cheese
