Recipe for 2009 Seared Scallops with Mandarin Oranges
1 pound Sea Scallops (small)
Marinade scallops in 1/4 cup mandarin marinade. Let stand for 4 hours. Cook pasta as directed on package and set aside. In stainless sauté pan place two table spoons of oil in pan on medium-high heat. Add scallops to pan. Sear scallops on both sides and remove from pan. Add onions and bell peppers to pan and cook 3 to 4 minutes. Add mushrooms and garlic to pan and cook a few minutes. As garlic starts to turn translucent add Mandarin Vodka, marinade, pasta and Mandarin oranges to pan. Cook until pasta is warm. Top with chopped parsley and Parmesan Cheese
